At Niobrara Valley Bison, our steaks have been aged and hand cut to give you the best steak possible. Buffalo steaks have a sweeter and cleaner taste than beef, without an after taste. Bison is also leaner than beef, so steaks will cook, faster at a lower temperature, with fewer flare-ups; reducing your cooking and clean-up time.
Niobrara Valley Bison offers delicious ground bison in two ways: loose, or pre-packed into patties. Our loose ground bison is vacuum packaged – not sold in a tube – so it retains is texture and flavor. Our patties require little thaw time and can be ready to grill in minutes – they are also thicker than a typical patty, resulting in a juicier burger. The low fat content of both products means more protein, less shrinkage and better flavor. You can substitute our lean, ground bison for any recipe that calls for ground meat.
The Niobrara Valley Bison hand cut roasts provide an easy to prepare meal, that is perfect for any gathering or family dinner. The leaner meat cooks more quickly, making it an easy choice for every day meals or holiday get-togethers – and roast slices are excellent for sandwiches, hot or cold.
